Ladies' Finger poriyal


Ingredients:-
  1. ladies' Finger - 1 cup finely  chopped
  2. Chilli powder - 1 tsp
  3. Coriander powder - 1 tsp( dhaniya powder)
  4. Grated coconut - 1/4 cup
  5. Cooked dal - 2 spoons (Optional)
  6. Onion(Big) - 1
  7. Oil/mustard/curry leaves/Urad dal for seasoning.
  8. Salt as Reqd.


Recipe:-
  • Heat the oil in pan and fry ladies finger for few mins. & keep it aside.
  • In the same pan, add 2 tsp of oil, add mustard - wait till it sputters and add urad dal + curry leaves.
  • Add chopped onions in the pan and saute until it turns light brown.
  • Add the fried ladies' finger and chilli powder, dhaniya powder, salt and sprinkle water ( very lightly).
  • Add cooked dal and saute the mixture for 2 mins .
  • Finally add the grated coconut and garnish with coriander leaves.
Serving size:-  2 to 3

Tips:-
    Chop the ladies finger in rounded shape  to avoid stickiness.
    Don't add lot of water just sprinkle a little if the mixture seemed dry

Coriander Egg Masala


Ingredients : -  

  1. chopped Coriander - 1 cup 
  2. Garlic - 6 cloves
  3. Ginger - 4 small cut pieces
  4. Small onions - 7
  5. Green chilies - 2
  6. Egg - 4
  7. Oil
  8. mustard
  9. Curry leaves 
  10. Salt as reqd.

Recipe:-
  • Add Coriander,garlic,ginger,green chilies & salt and prepare green paste using mixer-grinder.
  • Boil the eggs for 15 mins and peel off the hard shell.
  • Cut the eggs vertically into 2 slices and keep it aside.
  • Heat oil in the pan for a while and add mustard wait until sputters and then add curry leaves
  • Add the green paste to the pan and saute the paste for 2 mins until the raw odor goes away
  • Place the sliced  eggs in the pan and gently spread the paste all over the eggs.

Serving Size :- 2 to 3

Tips:-
   This recipe has to be cooked in simmer.


   




Rava Kesari



Ingredients:-

  1. Rava - 1 cup
  2. Sugar - 2 cups
  3. Water - 3 cups
  4. Cardamom - 2 or 3
  5. Cashew -  7 
  6. Raisins - 7
  7. Ghee - 0.5 cup
  8. Kesar powder 
  9. Pineapple essence for flavor 

Recipe:-
  •   Fry cashew and raisins along with ghee and keep it aside.
  •   Fry 1 cup rava with  2 spoonful of ghee in pan until rava turns light brown.
  •   Add 3 cups of water to the rava in pan with a pinch of kesar powder. simmer down and cook the mixture upto 2 mins.
  •   Add  2 cups of sugar to the boiling rava and stir the mixture until the sugar dissolves completely
  • Add 1/4 teaspoon of pineapple essence and spray cardamom powder.
  • stir the mixture and garnish the kesari with fried cashews and raisins

Serving size : 3 to 4

Tips:
   Don't overcook the rava/cashews. Fry everything only until it turns golden brown color.
